Description
Profile: An adorable, tangled mushroom nest. Wood Ear ribbons that are lovely to look at and even more delicious to eat. Add to pasta meals as crunchy earthy deliciousness noodles. Stir in to bind up loose chiles or soak up fermented black bean sauce in stir-fries.
Details: Instead of nourishment, these shredded Wood Ear mushrooms resemble destroyed classified paperwork from a government office. Perhaps lurking beneath all that black is some unreported secret that has been kept hidden from the public.
These, however, are mushrooms. When these delicate threads of finely sliced Wood Ear mushroom are hydrated, they turn brown and crispy, with a forest-like flavor.
Instead of using a mushroom, several chefs are now using shredded Wood Ear as a pasta. Combine them with fettuccini and smother in an alfredo sauce for an East-meets-West feast. Because of their antiviral characteristics, we like to put them in chicken soup. This mushroom has a unique texture, fascinating flavor, and a modern appearance, making it ideal for the hip home cook.
