Details: The Hen of the Woods mushroom grows in enormous, clustered masses that resemble the fluffy tails of hens, making it a popular North American favorite on the East Coast. (This is how the name came about.) They have a pleasant, mildly spicy flavor.
The Hen of the Woods mushroom goes great with smoked, grilled, or spice-rubbed meats. Naturally, this mushroom can be used in place of meat in pasta meals, mixed grills, and tacos with pico de gallo and hot sauce.
