The desi chickpea is a tiny, dark legume that is planted predominantly in the Middle East. It is hulled and split, younger, smaller, and sweeter than the usual chickpea or garbanzo bean. Natural Chana Dal is a good source of protein and fiber, low in fat, wheat and dairy-free, and easily digestible. It is strong in protein and fiber, and has one of the lowest glycemic indices of any food, making it a suitable choice for people with diabetes or concerns with blood sugar regulation.

Basic prep: Sort and rinse Chana Dal Peas well. 1 cup in 4 cups water Bring to a boil, then simmer. 35 minutes, skimming water.
