Profile: Elderberry, whole and ripe, with its natural almost black color. For generations, elderberries have been used to make pies, pastries, jams, jellies, wine, cordials, teas, and syrup.
Elderberries are high in vitamin C and contain vitamins A and B. Potassium nitrate, flavonoids (rutin and quercetin), anthocyanins, sambucin, sambunigrin, palmitic acid, and chlorogenic acid are among the other nutrients found in elderberry. These lovely purple-blackish berries are also used to strengthen the immune system and prevent colds and flu.
Because it was inhabited by a "tree spirit" known as Elder Mother, the elder tree was supposed to have magical protective qualities. As a result, the wood was frequently used to build dowsing rods and other divination equipment. Elderberries are frequently employed in spells of protection.
