It includes rosemary, fennel, thyme, savory and lavender. Like many herb mixes, the French herb mix varies, but rosemary, thyme, and fennel are constants. Always woodsy, flowery, invigoratingly clean, and biting fresh.
Traditionally, Herbes de Provence are used to flavor soups, stews, and braises, especially those with strong flavors like tomato sauce or red wine. Add to slow simmering dishes or to a dab of cooking oil before sautéing veggies to allow the vital oils to escape.
Lavender is only found in American Herbs of Provence and is rarely added in France.
