Profile: Early in the season, when the buds are still fresh, young, and fragile, white peony tea is harvested. Because of the early harvesting, white tea has a very gentle and sweet flavor without the astringency that typical green teas have. White peony tea has lovely, full-length leaves and new buds, resulting in a nicely balanced cup. While the name of this tea may be misleading, it should be noted that it is characterized by green and oxidized brown colours, as well as fine white "needles" to finish.
