Description

Profile: The primary reason that the thistle species Cynara scolymus is grown is for its artichokes, which are edible flower buds. The advantages of this prickly plant go beyond its use as food, though. Ancient Greeks valued the artichoke leaf for its medicinal qualities, and western folk herbalists continue to utilize it today. Typically, bitter artichoke leaves are used in extracts or macerated in liqueurs.

One of the most ancient vegetables in existence is the artichoke. It was initially cultivated in eastern Africa and subsequently transported to Europe via Egypt. On sacrificial altars and papyri from ancient Egypt, there are depictions of artichokes. Cynara and globe artichoke are two more names for this plant.
