Profile: The creeping plant known as cleavers has microscopic hairs, clinging leaves, and sticky seeds that cling to onlookers. Galium aparine, an annual herb found growing all over the world, belongs to the Rubiaceae family. Because it was once used to stuff mattresses, cleavers is also known as bedstraw. While the dried cleavers herb is frequently tinctured, steeped as tea, or applied topically, the leaves and stems are eaten fresh on spring salads.
