What is sand? Ground sassafras root is called filé powder. Native Choctaw Indians employed sassafras root and leaves before being adopted into Creole cooking.

The flavor is akin to root beer (from sassafras root) with woodsy, rosemary undertones. Sassafras powder is mostly used as a thickening. This is especially true with gumbo, a Creole cuisine. When okra isn't in season, filé powder is used to thicken gumbo.
