Description

Horseradish has been used in European herbal medicine for centuries. Armoracia rusticana roots are ground into horseradish powder. Herbal vinegars, honeys, sauces, and condiments can contain horseradish root powder.

Fresh horseradish provides mustard oil. Intact horseradish root is odorless. Enzymes from sliced or grated plant cells provide horseradish's characteristic scent. For maximum flavor, use grated mash immediately or store in vinegar. Once exposed to air or heat, it loses its pungency, darkens, and becomes bitter, yet dried material retains all beneficial characteristics.
Powdered dried root can be tinctured and encapsulated with apple cider vinegar or honey. When rehydrated, dried horseradish is twice as powerful as fresh. The volatile oils in dried horseradish evaporate when heated, thus it's utilized in raw sauces.
