- Auricularia mushrooms contain iron, protein, fiber, and vitamins B1 and B2

- These fungi are used for their crisp, snappy texture, and their color rather than their taste.
Cook them for only a short time. In fact, if allowed to stand with food for any length of time, these mushrooms lose their firmness. For soups, stir-fried dishes, or salads, add such slices as the last stage of food preparation.

Ways To Use: This popular fungus is typically used in many Oriental dishes because of its crunch and mild flavor. They go well with almost any meat, but they're especially good with pork.
Basic Prep: 1 oz. dry mushrooms equals 3-4 oz. fresh mushrooms, as a rule of thumb. To get started, rinse the product under cold running water to get rid of any debris. To rehydrate, place the necessary amount of mushrooms in a basin, cover with boiling water, and let soak for 25 minutes before draining.
