Profile: Despite the name, it's a macho mushroom. Maitake mushroom has a woodsy, clove or cinnamon taste. Consider the drydown of your dad's perfume. A trace of sandalwood and ginger may be detected at the end.

Details: The Hen of the Woods mushroom grows in enormous, clustered masses that resemble the fluffy tails of hens, making it a popular North American favorite on the East Coast. (This is how the name came about.) They have a pleasant, mildly spicy flavor.

The Hen of the Woods mushroom goes great with smoked, grilled, or spice-rubbed meats. Naturally, this mushroom can be used in place of meat in pasta meals, mixed grills, and tacos with pico de gallo and hot sauce.

Basic Prep: 1 oz. of dry mushrooms yields 3-4 oz. Rinse the product with cold water to remove debris. Put the necessary amount of mushrooms in a basin, cover with boiling water, and let soak for 15-20 minutes.
