We sought a mushroom-forward combination that wouldn't overpower delicate cuisine or put your mother in danger. Bolete, Oyster, Porcini, Shiitake, and Wood Ear are among the mushrooms used here, which come from all over the world. The resulting combination is ideal for infusing delicate meals with a powerful, unique, and nuanced mushroom flavor. Serve over chicken or fish, infuse into the five French mother sauces, or make a light soup with the mushroom broth.
