Description

Profile: One of the most unique spices in the Indian spice cabinet is Black Stone Flower. It's a rare dried flower that's a key ingredient in all Chettinad dishes.

Details:

Black Stone Flower, also known as Dagad Phool, is a soft brown and black lichen that gives many masalas, such as Goda Masala/Kala Masala, their trademark black hue. It has a distinct earthy scent and a dry, airy, fluffy texture and feel. It is commonly utilized in Chettinad cuisine, as well as Hyderabadi and Marathi cuisine to a lesser extent.

It's a form of fungus that grows on trees, rocks, and stones and is edible. It provides a pronounced woody scent and flavor to the preparation when used in little amounts. It should be roasted in a small amount of oil to reveal its full aroma.
