Tamarinds grow in wood-vaneer-like pods. When ripe, the fruit's insides turn dark brown and sticky. The taste is tart, sweet, and acidic. Except in North America, where it is commonly used in steak sauce.

Tamarind powder is dehydrated tamarind powder. Unlike fresh tamarind, the flavor is concentrated and strongly sweet-and-sour. It's used in sauces, chutneys, lentil and bean dishes, and pickles.
