Description

Profile: Chicory is a roadside herb and forage crop with blue blossoms.

India, Africa, and Asia add roasted root to strong beers and speciality coffees. In the U.S., roasted root replaces coffee.

Details: Like its relative the dandelion, chicory features brilliant blue blooms and serrated leaves. This Asteraceae native has naturalized in North America, China, and Australia. Cichorium intybus has a long history of use in traditional herbal treatments and is now a popular coffee substitute. Decoctions, extracts, and infusions are common uses for roasted chicory root.

Chicory is a bigger Asteraceae relative of dandelion. For years, its big taproot was utilized as a coffee substitute. Like dandelion greens, chicory leaves are used in salads and spring tonics. It's been grown along the Nile for centuries. Charlemagne wanted it in his garden. It was introduced to North America in the 18th century from Europe. Chicory is the top coffee alternative since it can be eaten and drunk.

Chicory includes fructans, including inulin and oligofructoses. Chicory is kasni.
