Our guar gum is the ideal thickening ingredient for dairy products, soups, and sauces. It thickens more quickly than cornstarch and offers a plentiful source of fiber that is soluble in water. For items like meat and ice cream, guar gum also serves as a binding agent.

What Is Guar Gum?

Guar gum is a multipurpose powder made from the seeds of the guar plant, a domesticated Indian legume.

Guar gum binds numerous foods and prevents ice crystals from developing in ice cream. In gluten-free baking, it improves texture and thickness. Powder helps meat and sausages retain water. It thickens sauces, dressings, and soups.

Exactly how is guar gum made?

The seeds of the guar plant are the source of guar gum. These beans are picked, dried, and then ground into a powder using a screen.

Recipe

4 cups cold water, 1 cup pecan halves, 2 bananas, 1/2 cup honey, 112 tsp cinnamon, 3/4 tsp guar gum.

Blend pecans until fine. Add 3 cups cold water. Blend until smooth. Bananas, honey, cinnamon, guar gum. Smooth combination. Half the mixture into a 2-quart ice cream machine. Blend 1 cup cold water into blender's leftovers. Mix in ice cream maker. Freeze as directed. Cover and freeze "ice cream" for two hours before serving to firm it up. Swap pecans for walnuts or cashews. Serves 12
