Basic Prep: | Sort completely, then thoroughly rinse and soak overnight. Rinse and place in a big pot with fresh water to cover. Bring the water to a boil for 3 minutes, then lower to a low heat and cook, covered, for 60 to 90 minutes, or until the potatoes are soft. Because this bean develops foam when cooked, skim the water frequently. |
