Indeed, jerk seasoning originated as an African spice rub that slaves brought to the Caribbean. As people and cultures crossed the Atlantic, spices like thyme, nutmeg, and cloves were added. The use of Scotch Bonnet peppers instead of milder chiles intensified the heat.
