An evergreen plant that grows in Northern, frigid, and temperate areas provides the berries. The Romans, Gauls, French, and many Native American cultures utilized it as a table spice, marinade ingredient, and preservative for ages. (They made jewelry and decorations from the berries.) Many cultures believed the berries had magical powers to purify places or bodies.
The taste is piney, sweet, woody, crisp, and reminiscent of gin. Juniper berries are used for pickling and distilling gin and other drinks. The flavor of dried juniper berries is good for meat rubs. This classic dry rub goes well with venison, boar, and lamb. The rub's finely ground thyme and rosemary complement leaner meat cuts.
