Thyme has always been thought of as a plant of courage. In fact, medieval knights carried it as a charm in their armor. The herb's name, "thymus", means "courage" in Greek.
It has also been used historically as a medicine. The herb's antiseptic primary essential oil, thymol, was used as an ancient disinfectant and antifungal cure. In fact, thymol is still used today in mouthwashes and organic disinfectants for these purposes.
Of course, we all know thyme from cooking. Everyday cooking uses thyme in, France, Portugal, Sweden, North Africa, and everywhere in between.
Dry thyme has a strong pine flavor with hints of camphor and bitterness. A must for bouquet garni. Thyme is versatile in the kitchen.
