Details:
Medium-grain rice is sized between long-grain and short-grain rice. Less than twice as long as wide (vs four to five times for long-grain). In addition to being moist and chewy, medium-grain rice grains tend to cling together when cooked, releasing more starch than long-grain rices. Arborio, Valencia, carnaroli, and bomba are all white rice varieties that are fantastic in risotto, paella, or soups where a little starch is welcome. These are both medium-grain rice varietals. Medium-grain brown rice is also widely available in supermarkets.
In spite of their size, shape, and starch content, arborio and bomba rice are sometimes mistaken for short-grain rices. While medium-grain rices can be cooked as short-grain rices (like Calrose), the reverse is not true.
