It is one of two commonly eaten grains in North America. Wild rice, a semi-aquatic grass, was traditionally farmed in lakes, tidal rivers, and bays. Native American tribes revered and relied on wild rice. Wild rice's high nutritional value, dark color, and earthy flavor prompted commercial production in the U.S. and Canada in the 20th century. In some places of North America, wild rice is still harvested using ancient ways.

Wild rice tastes and feels like whole grain. It's gluten-free, high in fiber, lysine, and protein per calorie, second only to oats. The cooked grain breaks out from behind the outer covering. The grains give a unique texture to grain salads, stuffings, side dishes, and soups.

Basic Prep: 1 cup rice, 4 cups water. Bring to a boil, then simmer. 45-50 minutes covered. To serve, fluff with a fork.
