Profile: The dried sap — or gum resin — derived from the roots of Ferula plants is known as asafoetida (Ferula asafoetida). It's usually dried and processed into a coarse, yellow powder, which is then utilized for culinary or medicinal purposes.

While Asafoetida is native to Afghanistan and Iran, it is widely used in Indian cuisine, where it is known as hing.

Because of the high concentration of sulfur compounds in asafoetida, it has a strong, pungent flavor when used as a spice. In fact, it's commonly referred to as stinking gum because of its foul odor.

When cooked, however, its flavor and smell become considerably more appetizing, and are frequently compared to leeks, garlic, and even meat.

Hing is used in Ayurvedic medicine to help with digestion and gas, as well as bronchitis and kidney stones. Some people wrapped dried gum around their necks to help ward off infection and sickness throughout the Middle Ages.
