Profile: It is made from Keemun tea from Anhui Province, China, and Ceylon tea from Sri Lanka. Keemun teas are smooth, light-bodied, and mildly sweet.

This favorite afternoon blend must be consumed during the best time of the day. This sparkling, coppery-red tea is a blend of black teas from India, Ceylon, and Kenya. And, if that wasn't enough, a hint of bergamot adds a touch of zing to the most English of beverages. Bake a batch of warm scones and spend the afternoon sipping and eating them. If desired, garnish with a slice of lemon.

Water: The quality of the water used has an impact on the tea's quality. Always use filtered or freshly drawn water.

Temperature: Using an electric hot water heater or a stove top kettle, bring fresh water to a rolling boil or 212°F.

Infusion Time; Once the water has reached the desired temperature, pour it over the tea bag right away. To keep the teapot warm, cover it. Carefully time the steeping and infuse for 5 minutes. Remove the tea from the pot as soon as it has finished steeping and lightly mix it.

Caffeine Concentration

This black tea contains more caffeine than our green teas. It's vital to remember that the brew time has the most impact on the caffeine level of a tea.
