CHAI MASALA
Tradition perfected with rose and chamomile
NYC's Legendary Chai Since 1989
What makes our blend stand out in a city that demands nothing but the best? A carefully guarded family recipe that's survived the test of time.
The Secret to Our 35-Year Legacy
While traditional masala chai typically relies on just cardamom, cinnamon, ginger, and cloves, our signature recipe goes beyond the classics with a revolutionary blend that has kept New Yorkers coming back since 1989:
Breaking Tradition, Perfecting Flavor
- Rose Petals: Our unique addition that introduces subtle floral notes and a gentle sweetness without adding sugar—a traditional element in Persian tea culture we've brought to chai.
- Chamomile Flowers: Offers a soothing quality and honey-like undertone that balances the warming spices—unheard of in traditional chai but creates remarkable depth.
- Bay Leaf: A Mediterranean influence that adds subtle complexity and earthy notes rarely found in standard chai blends.
- Allspice: Our Caribbean-inspired addition that brings a unified warmth, eliminating the need for excessive cinnamon or clove.
- Fennel Seed: Provides a subtle licorice sweetness and digestive benefits—used sparingly in our blend for perfect balance.
Why This Matters In Your Cup
- Multi-Dimensional Flavor: Traditional chai can be one-note and harsh; our additions create a complex flavor journey from first sip to finish.
- Reduced Bitterness: Our floral elements naturally counteract the astringency of black tea, requiring less sweetener.
- Wellness Benefits: Each non-traditional ingredient was selected not just for flavor but for complementary wellness properties—creating a more holistic experience.
- NYC Multicultural Spirit: Our blend represents New York's cultural fusion—honoring chai tradition while incorporating global influences that reflect our diverse city.
From our first location in the East Village to our newest shop in Crown Heights, our chai has become part of New York's cultural fabric—a testament to how thoughtful innovation can create something even better than tradition.
How to Prepare Authentic Indian Chai
Follow these traditional steps for the perfect cup of masala chai—the way it's been made for generations in Indian homes.
Use Whole Spices as Provided
Add 1 teaspoon of our whole spice blend directly to your pot—no crushing needed. The intact spices will slowly release their essential oils and flavors.
Simmer, Don't Rush
In a small pot, add crushed spices and 1-2 teaspoons of loose black tea to 1 cup water. Bring to a boil, then reduce heat and simmer for 3-5 minutes.
Add Milk the Indian Way
Pour in ½ cup whole milk (or your choice of milk) directly to the pot. Heat until small bubbles form at the edges—never let it fully boil.
Sweeten and Strain
Add jaggery, honey, or sugar to taste. Strain into pre-warmed cups—serving immediately captures the full aroma and flavor.
Chai Master's Tip: For the most authentic experience, try making a "kadak" chai by allowing the mixture to come to a rolling boil 2-3 times before serving—this traditional technique intensifies the flavor.
