1/2 cup soft white wheat berries, 1/2 cup water Milk, 3 egg yolks, 3 egg whites, 1/4 cup Whole Wheat Flour, 1 1/4 cups Milk, 1 tbsp Honey, 1 tbsp Melted Butter or Oil, 1/4 tsp Sea Salt, 1/2 tsp Baking Powder, 1/4 tsp Baking Soda.
Soak wheat berries in 1/2 cup water for 12 hours. Drain and rinse wheat berries before using. Blend wheat berries and milk for 5 minutes. Wheat berry/milk mixture: egg yolks, honey, melted butter, salt, baking powder, baking soda, flour. 1 minute. Egg whites should be firm. Fold egg whites into batter in a large bowl. Fry pancakes on a medium-hot griddle until bubbles form around edges; flip. 6 crepes.
