Ingredients for quinoa flour pancakes are 2 cups organic quinoa flour, 4 teaspoons baking powder, 1/2 teaspoon sea salt, 2 cups plus 1 tablespoon of water, and 2 teaspoons vegetable oil.
Dry ingredients should be combined in a bowl before cooking. Liquids are added; whisk to combine. The pancake griddle should be warmed up until a drop of water can "dance" on it. (As needed, spray or oil the griddle.) Pour pancake batter onto a heated griddle to create pancakes that are 4-5" wide. They won't brown much because they don't include sugar, so turn when edges appear dry. Warm up cakes while you prepare the rest (or cool on racks to use as flatbread). As it sits, batter might become thicker. Add 1-2 tablespoons of water as needed before spooning the next rounds of cakes onto the griddle. 12 pancakes are made.
