How to Make Thai Black Rice
3 tablespoons vegetable oil, 2 cups water or broth, and 1 cup rice
In a large pot, combine the rice and the oil. Fry until lightly browned over medium high heat, stirring constantly. Add the liquid slowly and carefully. Bring to a boil, then lower to a low heat. Cover and cook for 35-40 minutes on low heat. Stirring is not allowed. Turn off the heat and let the steam sit for 15 minutes. Serve with a fork to fluff it up.
